Cinnamon Proat Muffins

I’ve been working on new ways to have more balance in my meals while keeping them “prep” friendly, and my latest concoction transformed my egg white Proats (protein oats) into Cinnamon Proat muffins! They came out so good, and my son has been asking for them every day! Total Mom win!

For this recipe you will need:
2 cups old fashioned oats, prepared per package instructions.
1 cup old fashioned oats (dry)
1/2 tbsp cinnamon
2 cups liquid egg whites
2 scoops of Cinnamon Cookie Batter Protein
1/4 cup of Lakanto golden monk fruit sweetener
1/2 tsp Himalayan pink salt or sea salt
1 tsp vanilla extract
Pam Baking Spray and a non-stick muffin tin

Directions:

First, preheat your oven to 350F, and spray your muffin tin with non-stick spray (I love Pam Baking spray for egg and oat muffins).

Next, combine all ingredients in a large mixing bowl until well incorporated.

Using a 1/4 cup measuring cup or ice cream scoop (that’s my go to) fill each muffin tin about 2/3 full, then bake for 14-18 minutes until just set. This made enough for 24 muffins, so if you have 2 muffin tins you can bake them all in one shot.

One thing I made sure to do was slightly undercook them to avoid having dry muffins, they took about 15 minutes at 350F to just set, at which point I pulled them out to cool (they can continue cooking after they come out of the oven so don’t overdo it!)

Below are the macros for 2 egg muffins! These muffins are delicious, not like a bread muffin but more closer to an egg cup, they have been a life-saver for quick breakfast options this week 🙌

​Feel free to reheat them, drizzle some PBFit on top and enjoy!
