Im a big fan of tuna, and a delicious tuna salad with some crackers, tomato and avocado slices was just the ticket for lunch. This recipe is quick, low fat and full of protein! Heres what you'll need: 2 5oz cans of albacore tuna in water, drained 3 tbsp chopped red onion 1 tbsp olive oil vinaigrette (I used the Green Goddess variety by Tessamaes) 1/4 cup low fat yogurt 1 tbsp sweet relish (or chopped sweet gherkins which was what I had on hand) Fresh cracked pepper Break up the tuna in a medium bowl, then add in the other ingredients, combining well. I almost forgot the sweet gherkins! Also, feel free to add more yogurt if you prefer a creamier tuna salad...I also added a little of the pickle vinegar for additional balance of flavor 👌 Once everything is well mixed, enjoy with crackers and some fresh tomato slices and avocado, or make a yummy sandwich! I hope you will enjoy this recipe, and I look forward to sharing more soon!
