A simple, no-fuss meal has been my daily goal for dinner lately with a crazy schedule and trying to find a house in a super competitive market...my slow cooker chicken has been the star of several meals the last couple of months, and that includes this delicious and easy chicken quesadilla...using canned refried beans (Amy's) and of course a Flatout Bread wrap, this tasty meal took only 5 minutes to prepare! 🤗
You'll need: 1 Flatout ProteinUp wrap 3 ounces of slow cooker pulled chicken (see my recipe by clicking link here 👇) http://www.wonderfullymadehealthandfitness.net/blog/meal-prepslow-cooker-shredded-chicken 1 ounce @horizonorganic Mexican cheese blend 1/4 cup @amyskitchen retried beans with green chiles Olive oil spray Sides (optional) 1 tbsp low fat sour cream 2 tbsp @muirglen cilantro salsa 2 tbsp cilantro Preheat your skillet to medium, then spray lightly with olive oil...spread beans over one half of the protein wrap, then top with shredded chicken and cheese...fold other half over the top then cook on each side about 2-3 minutes...slice into wedges then serve with side toppings! Yummy!👌 #Macros (including toppings) 414 calories 33g carbs 14g fat 40g protein 💪

Im a big fan of tuna, and a delicious tuna salad with some crackers, tomato and avocado slices was just the ticket for lunch. This recipe is quick, low fat and full of protein! Heres what you'll need: 2 5oz cans of albacore tuna in water, drained 3 tbsp chopped red onion 1 tbsp olive oil vinaigrette (I used the Green Goddess variety by Tessamaes) 1/4 cup low fat yogurt 1 tbsp sweet relish (or chopped sweet gherkins which was what I had on hand) Fresh cracked pepper Break up the tuna in a medium bowl, then add in the other ingredients, combining well. I almost forgot the sweet gherkins! Also, feel free to add more yogurt if you prefer a creamier tuna salad...I also added a little of the pickle vinegar for additional balance of flavor 👌 Once everything is well mixed, enjoy with crackers and some fresh tomato slices and avocado, or make a yummy sandwich! It's been a hectic few weeks in the Pellettiere household, and it's been especially hard getting recipes together! Things cooled off a little for us the last few days, and when I noticed the over-ripe bananas on the counter it was time to create something... 🤔 I didn't want to make banana bread, or muffins, then finally decided on some delicious Chunky Monkey cookies! Using my trusty Flap Jacked Protein Pancake mix as a base along with some other delectable ingredients, these soft lightly sweet and nutty cookies really came out nice...it was a struggle to stop eating them! At less than 100 calories each with 4.6 grams of protein per serving, I'd say that it was a successful batch! 🍪🤗🍪 Here's what you'll need: Dry ingredients: 1 cup Flap Jacked Buttermilk pancake mix 1/2 cup Peanut butter powder (Honeyville) 1/4 cup coconut flour (Bob's Red Mill) 1/4 cup Orgain vanilla protein powder 1/2 tsp baking soda 1/2 tsp pink Himalayan salt 1/2 cup mini chocolate chips (Enjoy Life) Wet ingredients: 1 medium ripe banana 1 whole brown egg 1/2 tsp vanilla extract 3 tbsp earth balance butter 3 tbsp agave nectar Putting it all together: First, preheat the oven to 325F Next, measure out and combine all of the dry ingredients in a medium bowl; set aside. Next, mash the banana together with the Earth Balance spread and agave until there are no big chunks of banana. Then whisk in the vanilla extract and egg. It will look something like this 👇 Once the egg mixture is well blended, add in the dry ingredients all at once, folding together with a spatula until thoroughly mixed. Now it's time to plop them on the baking sheet (I lined mine with parchment paper). Take rounded tablespoons and make a dozen cookies, placing in the preheated oven for about 12 minutes. Once they are lightly brown, remove from the oven to a cooling rack. Once cooled enough, try to eat just one! (It will be a challenge, I had two right out of the gate 😹). Enjoy this healthier cookie for a sweet rewarding treat!
