Life has been INSANE lately, in a good way, which means I’m looking for ways to streamline and save time wherever possible! My latest twist on egg muffins literally took less than 10 minutes to mix together, with 15 minutes (give or take a couple) in the oven which of course was spent multi-tasking on something else! The thing I love about egg muffins is how versatile and portable they are; great for meal prep or having a fun and delicious healthy option when company is over for breakfast or brunch. I look forward to you giving these a try, they are simply delicious! You will need: A muffin tin, lightly coated with baking or other nonstick spray. Preheat your oven to 350F Ingredients: 5 Slices of uncured Turkey Bacon, diced 1/4 cup diced red or white onion 1 cup chopped broccoli florets 1 cup sharp cheddar cheese 1 ea 5.3 oz container of low fat cottage cheese (I love Good Culture Brand) 1 whole egg 2 cups egg whites 1 tbsp dried basil 1/4 tsp sea salt 1/4 tsp ground pepper Instructions: Combine all ingredients together in a large mixing bowl. Once everything is incorporated, scoop approximately 1/4 cup into your pre-greased muffin pan. Place in the preheated oven, baking for 15-20 minutes, just until the edges are lightly browned. Allow to cool, then transfer to your meal prep containers for storing!
