To say the last few months have been a challenge is an understatement, with some typical and atypical problems coming up with our new home, old injuries flaring up along with some new ones surfacing. Thankfully I've been able to continue making yummy healthy food throughout these difficulties, and I can attribute clean eating to keeping me going! One of our favorite treats to enjoy are my nutrient packed power balls. I have to tell my husband to restrain himself but he definitely has a hard time! Our two year old loves them too, and we couldn't be happier that's he's getting so much goodness in one ball of awesome! To say they are "amazeballs" pretty much sums it up...try them for yourself and let me know how you liked them! Here's what you'll need: Dry ingredients: 2/3 cup golden milled flax seed 1/4 cup coconut flour 1/4 cup Maca powder 1/4 cup hemp hearts 1/4 cup hazelnut meal 1/4 cup mini chocolate chips 1/4 cup vanilla protein powder (Orgain) 1/4 cup chopped pecans or walnuts 1/4 chopped dried fruit (Super Berry Fusion from Costco) 1/2 Teaspoon cinnamon Wet ingredients: 1 1/4 cup creamy peanut butter (can sub almond butter) 1/3 cup plus 2 Tablespoons of unsweetened almond milk 1/4 cup pure maple syrup 1 teaspoon vanilla extract Putting it all together: Combine all of the dry ingredients in a bowl, making sure to break up any clumps (Maca powder tends to have them and you don't want to bite into a big dry ball of powder!) Chop your dried fruit and nuts into small pieces and set aside. In a large bowl combine the peanut butter, maple syrup vanilla extract and almond milk. Mix well until a creamy paste forms. Now add in the dry ingredients including the chopped fruit and nuts. Using a spatula, mix everything until it's well combined, until a grumpily batter forms. Make a test ball to ensure it will hold together, and if need be add one tablespoon of extra almond milk at a time until the desired consistency is reached. Lastly, get ready to roll! Take one heaping tablespoon and form into a ball, trying not to eat too many as you do! This batch made just over two dozen power balls, and each bite is packed with healthy fats, fiber and protein. They are great for a snack, post workout bite or even a healthy dessert! Store in an airtight container in the fridge for up to a week 🤗 Enjoy friends! See the nutritional info below 👇
