Nothing like a quick and easy jambalaya for dinner to hit the spot after a long day of chores and yard work!
. This is one of my favorite dishes that typically came out of a box as a kid (no offense to Zatarans) but I was looking for a healthier spin! . This came together in about 20 minutes total, I’ll be sure to share my shortcut in the recipe! . You’ll need: 1 tbsp olive oil 1/2 small white onion, diced 1/2 orange bell peppers chopped 4 cloves of garlic, crushed and chopped 2 Roma tomatoes, diced 1 handful of fresh baby spinach, chopped 4 turkey kielbasa sausages, sliced into 1/2 inch pieces 8 ounces of peeled, deveined shrimp, chopped into large chunks 2 tsp @oldbay_seasoning 1 tsp paprika 2 packets of @seedsofchange_us Brown rice with quinoa (this is the quick hack!) 1/2 cup water . Putting it together: In a large skillet add your oil, onions, bell pepper, tomato, garlic, sausage, shrimp and seasonings and share on medium heat for about 8-10 minutes, or until the veggies start to get tender. . Next add in the rice and water, stirring occasionally with a spatula until everything is well incorporated and somewhat creamy. Add in the spinach last and cook until it’s just wilted! . Dish it out into a bowl and dig in 🍽 . If you get a chance to try this out, let me know how you liked it! . This is easier said than done. . Often as soon as the alarm goes off we are flooded with the laundry list of to-do items for the day. . As we grudgingly get out of bed (most days, let’s be honest) to start the day, our routines kick in to full gear. . Let’s change this habit...instead take a few moments to reflect on what a blessing it is to WAKE UP before you start the grind. . Appreciate the gift of breath, your very existence. . . For as long as I can remember, I’ve been self conscious about my overall appearance. . I was a goofy kid in school, had all the hand-me-down clothes, coke bottle glasses starting in second grade (thanks genetics 😏) and just always felt...awkward. . After stating middle school, I endured a lot of ridicule and jokes about my frizzy hair and tomboy looks. . My grandma would always take us to thrift stores when we’d visit and I ended up with styles from 15-20 years before I was even a thought. She meant well and I loved her for it, but I often felt embarrassed and self-conscious in my dated, well-worn outfits. . It was a daily struggle for me, not feeling comfortable in my clothes, or my body. . During the toughest time of my life back in 2005, my self esteem hit the lowest point. . I was depressed, eating my cares away and 30lbs overweight. . None of my clothes fit properly. . I felt bloated, sluggish and tired all the time. . My mindset was constantly negative,I wore a smile when necessary, but the sadness and frustration behind it was deeper than most would have ever guessed. . I dealt with some very difficult life lessons those years... . One thing became crystal clear to me was that my mindset had to change before anything else would. . I’d needed the strength to overcome my weaknesses and build the discipline to take care of myself. . If I could go back in time, this is what I would have told myself in those darkest days... . Pray every day...seek God in all you do and He will guide your steps. . Put away the past hurts. It does you no good to dwell on things that have already happened that you can’t change. . Focus less on the external, and dive into the heart of what brings you to life inside. . Don’t worry so much about what others think...odds are they could care less and you cause yourself that much more worth dwelling on hypotheticals. . Be kind to yourself. I love making one pan frittatas to save time and clean-up, and this combo turned out absolutely delicious! The perfect breakfast loaded with protein, veggies and of course delicious cheese!
You will need: 4 whole large eggs 1 cup egg whites 3 Oz Mediterranean feta cheese (I used simple truth brand) 1 single serving container (5.3 oz) of Good Culture plain cottage cheese Combine these ingredients and set aside. Veggies: 1 cup broccoli florets, cut into 1 inch pieces 1 cup of diced baby Bella mushrooms 1/4 cup minced yellow onion 4-5 mini sweet peppers, chopped Olive oil spray 1/2 cup part skim mozzarella (for topping) Putting it all together: Spray a large skillet with olive oil and preheat to medium, adding in the vegetables. Season with a little salt and pepper, then sauté the veggies until just tender (about 3 minutes). Next, pour over the egg and cottage cheese mixture and use a spatula to evenly distribute veggies throughout before it starts to cook through. Reduce heat to medium low and allow the Fritatta to cook on the burner until it starts to brown slightly at the edges. Then sprinkle the mozzarella cheese on top (it may still be a little “jiggly”). Next transfer your pan to a preheated oven (I set mine to 335F, temp that was safe for the handle to stay in tact per the manufacturer instructions-BE SURE TO VERIFY YOUR SKILLET CAN BE PLACED IN THE OVEN BEFORE DOING THIS!) *If your pan is not oven safe, you can cover the Fritatta and cook until firm* Bake for about 10-12 minutes until the top of your Fritatta is cooked and the cheese is lightly browned. Carefully remove from the oven, and allow to cool for a 5-10 minutes before serving, 15-20 minutes before transferring to meal prep containers. Makes 8 servings, enjoy! . For so long I interpreted stressors in my life negatively. . My thoughts and actions in response to daily challenges were often negative. . I let it affect my moods. . My interactions with others suffered. . I lacked the ability to focus and complete simple tasks. . I let stress overwhelm me. . What I failed to realize was that I needed to embrace the fact that difficulties would always be present. . It’s a normal part of life that we all have to face. . What makes all the difference is how we RESPOND when adversity comes our way. . Instead of “oh not again” or “why me?” think “how can I grow from this?” . What are some positive things happening in your current situation? (Sometimes they are hard to spot, but you’d be surprised at how much good is there if you change how you’re looking at each circumstance). . Realize that all “stress” isn’t bad. . Some of the best forms of positive, or eustress, are things like: ⚙️ Exercise (this is often a great stress-reliever too). ⚙️ Meeting new people (I was always freaked out by approaching people I didn’t know, but i can’t express enough how beneficial this is for our communication and personal growth). ⚙️ Working toward a goal that you’ve set. ⚙️ Overcoming past failures or stumbles on your journey. . Viewing stress in a different, more positive way is liberating. . Embrace the challenges that come your way. . Be grateful that you have an opportunity to improve with each passing day. . Simple Eggplant Parmesan (technically mozzarella I guess, there’s no parm on here 🤣) for dinner tonight! . It’s been a while since I’ve found good eggplants at the store, so when I saw two @ladymoonfarms beauts I knew exactly what I was going to make as part of my weekly prep...it’s one of the dishes that gets better after it’s made, we don’t get tired of it at the Pelly household! . I originally found this recipe back in the day as part of the #17daydiet cookbook, the addition of fennel gives a nice flavor to the sauce, and I like to toss some in top for a little crunch too 👌 . Get my go-to adaptation below 👇: . Sauce: . 1 pkg 93/7 Ground Turkey (can also use 99% if desired) 1 Jar Pasta sauce (look for one with minimal added sugar, I like @muirglen) 1 tbsp fennel seeds 3 cloves crushed garlic for extra deliciousness . First, cook the ground turkey and garlic in a large skillet (drain off any fat before adding the sauce), adding the sauce and fennel seeds after its fully cooked. Cover and simmer on low while the eggplant is cooking. . Eggplant🍆: . Cut into 1 inch slices then arrange on a baking sheet sprayed with olive oil. Once on the sheet, spray the tops of the eggplant slices with olive oil and season lightly with salt and pepper, garlic and onion powder. . Roast in the oven for about 25 minutes at 400F until golden brown and tender. . In a large baking dish sprayed with olive oil, spread a little sauce on the bottom, then layer with eggplant and sauce until you run out (I usually get 3 layers). Top with mozzarella cheese and another sprinkling of fennel seeds. . Bake an additional 15 minutes or until cheese starts to lightly brown, then remove and allow to sit for about 10 minutes before serving! . If so you’ve got to try these super simple Loaded Pizza Egg muffins! . First you’ll need: Preheat your oven to 350F . Next prep the filling ingredients: . 5 baby Bella mushrooms, chopped 1/4 cup red or white onion, diced 3 cups fresh baby spinach, roughly chopped 2 oz @boarshead_official Turkey Pepperoni, chopped into small chunks 1/2 tbsp olive oil 6 grape tomatoes (or 1 Roma tomato) diced . Combine these ingredients in a large skillet and sauté on medium heat until the spinach and mushrooms have wilted down some. . Next take a greased muffin tin and evenly distribute the filling over the 12 cups (mine were about 1/2 full). . Using approximately one cup of egg whites, pour over the filling until about 1/4 inch from the top of the muffin cup. . Top each muffin with 1 tbsp of mozzarella cheese (I used @tillamook 😍) then pop in the preheated oven for about 18-22 minutes, or until the cheese starts to brown slightly. . Remove from the oven and allow to cool for a few minutes (they will start to pull away from the edges as they cool-this makes for easier transferring to your prep containers.) . Enjoy right away or move to your meal prep containers for later! . . . . . This is one of the billions of National >insert random food here< Days that I can wholeheartedly get behind 🤣 . Of course I had to put a healthy spin on it, using my favorite Level-1 protein by 1stphorm 😍 . To make this Strawberry Shortcake soft serve you’ll need: . 2 scoops of Strawberry Milkshake Level-1 Protein . 1 cup of frozen strawberries (I used some we picked fresh from a local berry farm last month). . 1 cup of ice, give or take 1/2 cup or so depending on how thick you want it. . 1/3 cup unsweetened almond milk . 1 tbsp of Navitas Organics Cacao Butter (this adds a super creamy and satiating touch to the ice-cream) . 2-3 drops of organic stevia (I used Trader Joes Brand) . Combine all ingredients in a blender and pulverize until a smooth, creamy soft-serve emerges. . To with fresh strawberries and some coconut flakes and you’re all set! .
